This is a deliciously nutritious breakfast (inspired by my favourite local cafe – Get Fresh), celebrating our love for coconut and fresh seasonal fruit. We picked up some juicy peaches at the farmers market over the weekend, so used these as an addition to this breakfast. Next time I will try figs, or you could use fresh berries or passion fruit .. the possibilities are endless! This was incredibly satisfying, kept us going all morning, and is a great ‘gut healthy’ meal.
Ingredients:
1 Green Apple (preferably organic)
1/4 Cup Toasted Shredded Coconut
5 Dates (pitted)
2 Tblsp Slithered Almonds or Roughly Chopped Macadamias (can be toasted)
Organic Natural Yoghurt (I used sheep yoghurt)
1 Peach (or your choice in fruit)
1 Tbslp Coconut Oil
Cinnamon Powder
Method:
1. Halve the peach (or preferred fruit, ie. fig) and lightly grill in coconut oil in a small frying pan, on low-moderate heat. Turn fruit over, keep an eye on it so it does not burn. It should take around 5-8 mins to caramelize, as the sugary juice starts to seep from the fruit. Once the fruit has caramelized and softened, remove from heat
2. Finely slice apple, or use grating attachment in food processor – you don’t want the processor to mash it up, it needs to be thick enough so that it still retains its crunch
3. Add toasted coconut, sliced/grated apple, dates and some nuts to a bowl and mix well
4. Spoon a generous serving of yoghurt on to the coconut & apple mix, then add the caramelized peach (or preferred fruit) on top. Sprinkle with remaining nuts and cinnamon powder and serve immediately (before the apple starts to brown from oxidization). Enjoy!
Addition: You may also like to drizzle a little natural honey over the top too!
