Chia seeds are a very rich source of calcium, magnesium, phosphorous and manganese, antioxidants, fibre, omega-3 fatty acids and HDL (good cholesterol). They also provide good satiety due to the fat and protein content, help to stabilise blood sugar levels and can be used as an ‘egg replacer’ for those with egg allergies. This recipe is a delicious & easy breakfast option that you can prepare the night before, and keep in the fridge for the next mornings breakfast!
Ingredients:
3 Tblsps Chia Seeds
1 Cup Almond or Coconut Milk
1 Tblsp Rice Malt Syrup or Sweetener of Your Choice
Pinch Vanilla Powder
Toppings:
Small handful of fresh or frozen berries
1 Tblsp hemp seeds
1 Tblsp bee pollen
Method:
1. Mix all ingredients together well in a glass jar and leave in the fridge overnight to set
2. Serve in the morning with fresh berries and seeds, or whatever you have in the cupboard!
