The Sunshine Coast has just experienced a crazy heat wave, with almost 100% humidity on some days – gross! So I have been craving ice cold drinks – green juices, smoothies .. and this, Iced Rooibos Chai Latte. Rooibos (meaning ‘red bush’ in Afrikaans) is a wonderful red medicinal tea that comes from South Africa. It is caffeine free and rich in minerals, polyphenols, bioflavonoids and flavonoids – powerful antioxidants that have antiinflammatory, antiviral and antimutagenic properties. Rooibos is extremely effective in treating respiratory and skin disorders, as well as diabetes, hypertension, kidney stones, metabolic and digestive issues. It also promotes good bone and hair health, circulation, improves cardiovascular health, as well as holding anti-cancer properties. 

Ingredients:
2.5-3 cups of coconut milk (or almond milk)
2 rooibos chai tea bags (I love ‘Eco Teas’ brand)
2 tsps rice malt syrup or sweetener of choice

Method:
1. Place all ingredients into a small saucepan and simmer for 8-10 minutes (try not to let it boil as it can cause the milk to separate)
2. Once cooled, place into a glass jar and put into the freezer for 30 mins to get nice and cold before pouring into a large glass full of ice

You can also make a big batch up and store in the fridge for up to 3 days. Enjoy!
