These are the perfect green accompaniment to your morning eggs – or devoured as a lone afternoon snack with a big dollop of homemade guacamole !
Ingredients:
1 large head of broccoli
5 rashers of free range bacon
4 eggs
1 large red onion
2 cloves garlic
3 birds eye chili’s (add more or less as to how much heat you prefer)
1 large handful fresh garlic chives
1 large handful of fresh parsley
1/2 cup GF flour
1/2 cup quinoa or rice crumbs
Small handful of pine nuts
2 tblsp nutritional yeast
2 tblsp black sesame seeds
Good splash of coconut aminos
Splash of fresh lemon juice
Generous pinch of sea salt & cracked pepper
4-5 heaped tblsp ghee (for cooking)
Method:
1. On a moderate heat, cook all of the bacon rasher
2. Use a grating attachment to process the broccoli
3. Finely dice the onion & garlic and add to a large mixing bowl with the processed broccoli
4. Roughly chop the parsley, chives, chilli & bacon and add to the bowl
5. Add all remaining ingredients and mix well until combined
6. On a moderate – high heat, heat 1 heaped tblsp of ghee in a large frying pan
7. Use your hands to form a patty with the mixture and add to the pan (however many will fit in the pan at one time) and cook for 4-5 mins per side, keep an eye on them to ensure they don’t burn. Continue this until the mixture is all gone, adding a heaped tblsp of ghee before each fresh batch. This mixture should make roughly 16 fritters
Omit the bacon for a vegetarian option!
